Red Velvet Brookies
Great for a Galentine’s get-together or for that special someone, these treats feature red velvet brownie batter and pink chocolate chip cookie dough all in one. With their red and pink hues, they are perfect for the season of love.
The cookie dough:
2 sticks softened butter
1 cup brown sugar
⅔ cups white sugar
2 teaspoons vanilla
a few drops pink food coloring
2 egg
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup chocolate chips
1 cup Valentine’s Day M&Ms + more to decorate
The red velvet brownie:
1 ⅓ cup white chocolate
10 tablespoons butter (1 stick + two tablespoons)
3 eggs
3/4 cups white sugar
2 teaspoons vanilla extract
1 ⅔ cups flour
¼ cup cocoa powder
a few drops red food coloring
Step one: line a 9×13 pan with tin foil and preheat the oven to 350 degrees
Step two: make the cookie dough by creaming together the butter and sugars in a stand mixer until light and fluffy
Step three: mix in the vanilla and pink coloring
Step four: add eggs one at a time, mixing to combine after each addition
Step five: mix in the flour in three parts along with the baking soda and powder
Step six: once fully incorporated, use a spatula to stir in the chocolate chips and M&Ms
Step seven: cover and put in the refrigerator while making the brownie batter
Step eight: begin the brownie batter by melting the white chocolate and butter together in the microwave
Step nine: in a large bowl whip the eggs, sugar and vanilla together using a stand mixer until pale and light in color
Step ten: fold the white chocolate mixture into the egg mixture using a spatula and add in the red coloring
Step eleven: fold in the flour and cocoa powder until just combined
Step twelve: to assemble the brookies, take pieces of cookie dough and press into the bottom of the pan, no need to cover it completely
Step thirteen: pour the brownie batter over this and then add the remaining cookie dough on top of that, add extra M&Ms on top if you outs like
Step fourteen: bake for 35-40 mins and then allow to cool completely before slicing
Step fifteen: enjoy!
Mini Pink Velvet Cupcakes
These sweet delights are perfect for a Valentine’s party as they are great for feeding a crowd! If you would like to make them full-sized, bake for an additional ten minutes.
1 stick softened butter
½ cup sugar
1 ½ teaspoons vanilla extract
a few drops pink food dye
2 eggs
1 ¼ cups cake flour
¾ teaspoon baking powder
¼ teaspoon baking soda
½ cup buttermilk
⅓ cup melted white chocolate
The frosting:
4 tablespoons butter
1 block cream cheese (8oz)
2 cups powdered sugar
⅓ cup melted white chocolate
1 teaspoon vanilla extract
2 tablespoons heaven cream
White chocolate curls or conversation hearts (optional, for decoration)
Step one: preheat oven to 350 degrees and add cupcakes liners to a mini muffin pan
Step two: using a hand mixer, cream together the butter and sugar until light and fluffy, about five minutes
Step three: add the vanilla and food coloring, mixing to combine
Step four: add in the eggs one at a time, mixing after each addition
Step five: in a separate bowl stir together the flour, baking soda and powder
Step six: alternate adding the flour mixture and buttermilk into the wet ingredients mixing until just combined after each addition
Step seven: finally, add the white chocolate to the batter and mix to combine
Step eight: add one tablespoon of batter into each muffin tin and bake for 7-8 minutes until a toothpick inserted comes out clean
Step nine: let the cupcakes cool while you make the frosting; begin by creaming together the butter and cream cheese until light and fluffy
Step ten: add in the powdered sugar and whip until fully combined
Step eleven: add in the vanilla, white chocolate and cream
Step twelve: pipe frosting onto the cupcakes and top with white chocolate curls or conversation hearts
Step thirteen: enjoy!
